Most people never need a paid plan. Pay only when one of three things is true: you need messages to survive longer than the free window, you need several inboxes open at once, or you need to receive on your own domain and drive it from an API. Those are the only real differences between the tiers.

What you are actually paying for

The free tier is not a demo. It generates real addresses on real receiving infrastructure, delivers real mail and shows the full message body, including attachments. If your use is a handful of signups a month, upgrading buys you nothing you will notice.
